Ingredients

½ pound fresh spinach

1 cucumber, peeled and sliced

2 large tomatoes, chopped

2 hardboiled eggs, sliced

3 tablespoons olive oil

2 tablespoons fresh lemon or lime juice

Preparation

  1. Place spinach leaves on a platter.
  2. Add cucumber slices, tomatoes, and egg.
  3. Drizzle with olive oil and lemon or lime juice.
  4. Don't toss! Serve as is.
