Ingredients:
• Whole wheat spaghetti
• Poblano pepper
• 2 cups frozen peas
• 1.5 cups milk
• 2 handfuls spinach
• 1/4 cup Greek yogurt
• Fresh basil
• Salt
• Black pepper
• Garlic powder
• Mozzarella cheese (for melting on top)
• Cherry or grape tomatoes (optional)
Instructions:
1. Boil the whole wheat spaghetti until al dente.
2. Place the poblano pepper in the air fryer at 400°F for 12-15 minutes, then peel the skin off once it’s done.
3. Microwave the frozen peas
4. In a blender, combine the spinach, basil, poblano pepper, peas, Greek yogurt, milk, and seasonings (salt, pepper, garlic powder). Blend until smooth.
5. Toss the cooked spaghetti with the blended sauce.
6. Add melted mozzarella cheese on top and garnish with cherry or grape tomatoes if desired.
🔥If you want more heat, try adding an extra poblano pepper or jalapeño peppers.
